PB & J For Breakfast...Why Not?

And...it's Monday again-everyone's favorite day of the week! ;)

Actually, this week I didn't dread Monday at all, only because I was looking forward to my workout! This week I get to test my 3 rep maxes on push presses, bench press, squats and deadlifts.

Today was upper body strength and power day. I was able to get 120lbs for 3 reps on both push presses and close grip bench press, which I was happy with. I definitely feel that I have gotten stronger on this program, which is mostly what I'm focusing on right now. When this program is over I'm going to do a more hypertrophy focused phase for a couple of months just to change things up a little.

Well, this morning, I woke up looking forward to my usual protein oats for breakfast....only to find that we were OUT of oats! So... after going into freakout mode for about 10 seconds wondering what in the heck I was going to eat, I finally decided on just having a protein shake and toast with peanut butter. Which then gave me the idea of a having peanut butter and jelly sandwich(on Ezekiel bread with natural peanut butter and no sugar added jelly, of course)! Pb & J for breakfast-why not? Who know, it may just become a regular thing. ;)

My second freakout of the day came when I was going to make some eggs for lunch and remembered that we were out of eggs!!!! I mean, really? We did have some egg whites, but I NEVER eat just egg whites by themselves. Gag me. Well, thought I'd suck it up and give the egg whites a try and realized that with a bunch of cheese, some ground turkey, and a little salsa added in, they're not all that bad! Knowing how to improvise is a good thing. ;)

So, in other news....this weekend, all three members of the Cappotelli household went to bed with pizza bellies. That's right, I said all three....2 people and one very naughty dog! So after having to go out and buy a second pizza, that was our treat meal this week while watching my alma mater, the University of Louisville, play in the NCAA basketball championship. Go Cards! :)

Sunday night we went to watch a friend of my husband's wrestle his first wrestling match at Ohio Valley Wrestling, the place where my husband used to wrestle. It sure was weird being back there after 7 years! A lot of memories at that place! Then we watched "The Bible" Sunday night, which I look forward to every week! Is anyone else loving that show as much as me?

Today I just finished cooking up my food for the week-6 chicken breasts in the crockpot, 2 pounds of ground turkey, and cut up the broccoli. Now we're good to go for the next few days!

  3. Having a large dog in the house is always a challenge! We have food disappear on a regular basis too :(
    I have GOT to get on board with cooking in bulk for the week. I am really learning how important that is to staying on track. When I'm hungry and there is no healthy food waiting on me, it's usually bad news!

Putting My Heart Out There

Hey guys. Here's where we're at right now: Matt finished his radiation treatments last week. Did they help? I don't know. He's sleeping a lot more. Having trouble chewing and swallowing. Not eating much. Not talking much, at least not in full sentences. It's just been a slow, steady decline for the last few months. I think it was really too late for radiation....But who knows, maybe it is delaying things. We went in last Tuesday for his infusion and talked with his neuro-oncologist about everything that we've been seeing with Matt, and he decided that we're at the point now where we should discontinue treatments...I feel like it's the right decision, even though it breaks my heart knowing that there is nothing else we can do. But I feel like we've done everything. All the supplements, the diet, the chemo, the radiation... Matt has fought hard. He never gave up hope. He kept the faith. He never complained through any of this. Not once did I hea...

Why?

Why? Why do I care so much?  Why do I make sure they brush their teeth at night so that they don't get cavities? Why do I spend my own money to buy them clothes, toys and decorate their rooms, among other things?  Why do I do 5,000 loads of laundry a week to make sure they have clothes to wear to school? Why do I make sure they go to church on Sundays so that they'll be raised to know about Jesus? Why do I try to give them chores and responsibilities so that they will turn out to be decent human beings? Why do I read them a bedtime story at night, even when I'm exhausted? Why do I clean up after them constantly and cook for them and try to always have healthy snacks and food on hand? Why do I go to their sports games and practices, just to feel like the odd man out standing there awkwardly with their bio mom? Why do I give 100% of myself and make so many sacrifices for children I didn't birth? Only to be insulted and told hurtful things? To be made to feel like I'm ...
