Meals I'm Loving Lately

I know everyone loves seeing food/meal pics, so I thought I'd share some meals that I've been loving lately!

Chicken quesadilla- I usually have this for a dinner or lunch with a side of fruit or veggies. I use Tam-x-ico's whole wheat tortillas, mozarella cheese, and canned or shredded chicken.

Turkey burger with roasted potatoes....and ketchup on everything! This is a pretty typical dinner for me, also with a side of veggies. Because they're good for you, not because I like them. ;)

French toast- I make it with Trader Joe's low carb sprouted grain bread, egg whites, and cinnamon. Top with Walden Farm's syrup and two fried eggs and organic turkey bacon on the side. I love breakfast for lunch! 

Friday night is burger night! This is grass fed lean beef on a whole wheat thin bun with a velveeta cheese slice(because it's deeelicious), and a side of green beans. 

Because October= pumpkin EVERYthing, duh. I've been loving these pumpkin spice English muffins with cream cheese for a yummy post workout treat, along with a protein shake.
This is one of my fave snacks-2% cottage cheese on sprouted grain bread and nuts.
French toast sandwich-with cheese and turkey bacon, and a fried egg and orange on the side. This really is one of my favorite meals. You gotta try it!

Yes, I obviously love bread and cheese. ;)

  1. So fun to see the meals and always find new ideas to use. For instance, it would never have occurred to me to put cottage cheese on toast. May have to give it a go. Also, I did pick up some of the sprouted grain bread at TJ's. but haven't tried your version of French toast with it - I must do that too! I have just been avoiding any type of French toast since I have only made it with all the 'heavy' stuff on it.

    Thanks for posting these! I've been in a food slump lately so these are timed perfectly!

    1. Glad I could give you some ideas! I consider myself pretty boring when it comes to eating, but these I guess are some of my more creative ones. The cottage cheese on toast is so good!

  2. I just love your blog. You never know what you will be talking about so it's always a surprise. I think you show everyone you can be fit and muscular and beautiful inside and out and try all kinds of new things to better yourself physically and mentally. Thanks for your amazing blog..

  3. It's so nice to see a fitness minded individual that actually eats BREAD! I swear every other fit chick I follow on social media (even if I love everything else about their life and training philosophy) seems to avoid bread like the plague. In clinical cases such as Celiacs, IBS etc this is completely understandable, but I feel like everyone and their mother is eating nothing but eggs, spinach, sweet potatoes and good fat regardless of weather they have a food intolerance or not. I love Trader Joe's Sprouted Rye - my fave! :)

Putting My Heart Out There

Hey guys. Here's where we're at right now: Matt finished his radiation treatments last week. Did they help? I don't know. He's sleeping a lot more. Having trouble chewing and swallowing. Not eating much. Not talking much, at least not in full sentences. It's just been a slow, steady decline for the last few months. I think it was really too late for radiation....But who knows, maybe it is delaying things. We went in last Tuesday for his infusion and talked with his neuro-oncologist about everything that we've been seeing with Matt, and he decided that we're at the point now where we should discontinue treatments...I feel like it's the right decision, even though it breaks my heart knowing that there is nothing else we can do. But I feel like we've done everything. All the supplements, the diet, the chemo, the radiation... Matt has fought hard. He never gave up hope. He kept the faith. He never complained through any of this. Not once did I hea...

One Year...

One year ago today... the day it all changed. It was a Tuesday. I got the call from Matt around 3:00. I remember I was sitting at the computer at home. Matt told me that he was at the hospital, and that Bob Scott, his boss, had driven him there. Then he said those 4 words I never expected to hear: “The tumor came back.”  My heart stopped. Matt had gone in that morning for an MRI, as he has done numerous times in the past 10 years. He was now at the point where he had an MRI just yearly now, and that one was done in February, which showed that everything was fine. There was no sign of tumor growth, which had been the case for the last 10 years, praise God. But because Matt had been having some seizure activity for the last few months, they suggested he go in for another MRI in July. We then decided we should move up the appointment, because he had been having a headache every day for the past week. Good thing we did.... After I hung up with Matt,  I immediately brok...
