While I don't advocate any particular "diet" for most people, and I am definitely #TeamCarbs, my husband has been following a keto diet for his brain tumor for the past couple of months now. I've been trying my best to make this an enjoyable thing for him, and so far he is actually liking it! He's only "cheated" once since he's started, and that was with pizza on our trip to New York.
We try to keep his carbs under 50 grams a day, so that's basically no added carbs. He does eat strawberries or blueberries on workout days, but besides that his only carbs pretty much come from nuts and vegetables. During the week he mostly eats eggs, cottage cheese, ground turkey or beef, nuts, lots of oils, and whey protein. He actually hasn't lost any weight(a good thing) because we make sure that he is eating enough calories to maintain his weight. (FYI: if you think that a keto diet is magically going to make you lose weight, well, yeah, it probably will ....because you will most likely be eating less calories by cutting out carbs. HOWEVER, if you take out carbs but still eat too many calories, you will NOT lose weight!)
He eats pretty much the same during the week, but on the weekends I try to make one "fun"/splurge meal and a keto dessert. So far all the recipes I've tried have been awesome! There have only been a couple of "fails", and that was with some of the dessert recipes I've tried. Here are some of the recipes that he has loved so far:

He's always loved my panko parmesan breaded chicken tenders, but these did the trick even without the bread crumbs. The butter made them super tasty! |

I sometimes add a tablespoon of cocoa or protein powder to these as well to make them a little more chocolate. For a single serving, you can just use 2 tablespoons each of coconut oil and peanut butter. |
Like I said, I do NOT advocate a keto diet for most people, especially if you lift weights and are active. But a keto diet is being used now to help with certain neurological diseases like epilepsy, Alzheimer's disease, Parkinson disease, brain cancer, autism, and multiple sclerosis. I personally would never give up my carbs, but hey, if you can follow it and it's enjoyable and sustainable for you, then by all means, do what works for you! Even if you aren't low carb, you can still give some of these recipes a try!
