Need Some Dinner Ideas!

I went to the chiropractor today, and it was really encouraging. I don't have an injury or anything major going on, just some muscle tightness and imbalances that can hopefully be fixed! I don't have any restrictions as far as working out, which is good to know! 

The plan is to go the chiro once a week, foam roll, stretch, and strengthen my gluteus medius. It has been driving me crazy not knowing exactly what was wrong and what to do or not do, so now that I know I feel SO much better.

Okay, soooo I need some new dinner ideas! I'm good with meals during the day, but I kind of hate my dinners because they're so boring...and because I'm a baby and hate eating my veggies!  I like to keep my dinners low carb-just protein, veggies, and some fat. Usually it's leftover chicken with broccoli, a lean beef patty with broccoli, or taco seasoned turkey breast with...yup, you guessed it! Broccoli!

There are not many vegetables that I like, but broccoli is one that I can tolerate. Trust me, I have tried preparing vegetables so many different ways, but have yet to eat a vegetable that actually tastes good to me. I don't like asparagus, cauliflower, peppers, spinach, lettuce, cucumbers or squash! I hate that I hate vegetables because they're so good for you...but I've really tried to make myself like them! I just end up choking them down with some water as fast as I can.

I actually tried a new strategy last night while eating my broccoli. I thought to myself, "Maybe it's all in my head and if I tell myself that I like broccoli, then I will!" So as I'm chewing my broccoli I'm thinking, "Mmmm...this tastes so good!"  Umm....yeah. That didn't work.

I've got to get creative and think of some better quick and simple dinner ideas! Any suggestions?

  1. been following this blog for a few months now, but have never commented! first, you are a total inspiration and you and your hubbie are rockin' :)
    second, as a prior veggie hater, the thing that changed my life was BAKING my veggies. All vegetables are better and dare i say delish baked. Preheat oven to 375+ put your cut up veggies on a baking sheet, liberally douse with EVOO,bacon grease (mmm!), or coconut oil (it will melt) and lots of fresh ground salt/pepper. Pop in oven for 15- 45 mins until it browns and smells good. then enjoy HOT! if you want it extra delish... add some fresh parmesean and a little lemon juice for the last 5 mins of baking. try w/ broccoli,cauli,asparagus,brussel sprouts etc... this literally changed my veggie intake 100%! for zucchini/squash try frying up in a pan like you would an egg (so grease,salt,pepper maybe oregano too).   2. Thanks Elissa!! I tried baking broccoli once and it didn't turn out too well...but maybe I just need to try it again! I am willing to try anything!

    This is my first time reading your blog. I stopped by to check it out after reading Jen Comas Keck's latest post (so you have her to thank for another reader!) I love veggies but I think I may have some ideas to help you out...1. Have you ever tried juicing? It can be a little more time consuming but mixing raw spinach, kale, beets, celery, cucumbers,etc with a few carrots, red apples, and ginger makes for a deliciously refreshing and nutritious treat. To start, maybe you could add a cup of baby spinach leaves to your protein shakes (i promise you won't taste it at all!)
    2. Instead of eating veggies alone, try hiding them in your food. I'm sure you've probably tried this but a few ideas I have are to make a cassarole - egg, beef or ground chicken, and chop up veggies like onion, squash, zucchini, and mushrooms into teeeeny tiny pieces, throw em in cover with a tomato sauce and bake. My boyfriend HATES onions and peppers but I've gotten him to eat them in this way without gagging or complaining (most of the time)
    3. Seasonings are EVERYTHING! Try really bold herbs and spices like smoked paprika and garlic on your squashes, cinnamon and truvia on your brussel sprouts (and bake the heck out of em to bring out the sweetness-just don't burn em), chili and cumin powder on broccoli, snap peas, and carrots, and a little sea salt will bring out the flavor in anything. Elissa's suggestion above of parmesan cheese is great too if you eat dairy.
    4. Grill....everything always tastes better on the grill. Purchase a vegetable grill pan, a metal plate with holes in it, that you can place on your grill and throw marinated (in balsamic, garlic, pepper, and sea salt) veggies on. My favorite are red onions, eggplant, yellow squash, portobello mushrooms, red and orange peppers, and cherry tomatoes

  5. What about stuffed Marrow?
    I just cut the ends of the marrow and then cut it into approx. 3 inch slices, remove the seeds in the middle and then boil for a few minutes. Stuff with minced beef or turkey and bake in the oven.
    I think this is delicious but fortunately I love my vegetables!

Putting My Heart Out There

Hey guys. Here's where we're at right now: Matt finished his radiation treatments last week. Did they help? I don't know. He's sleeping a lot more. Having trouble chewing and swallowing. Not eating much. Not talking much, at least not in full sentences. It's just been a slow, steady decline for the last few months. I think it was really too late for radiation....But who knows, maybe it is delaying things. We went in last Tuesday for his infusion and talked with his neuro-oncologist about everything that we've been seeing with Matt, and he decided that we're at the point now where we should discontinue treatments...I feel like it's the right decision, even though it breaks my heart knowing that there is nothing else we can do. One Year...

One year ago today... the day it all changed. It was a Tuesday. I got the call from Matt around 3:00. I remember I was sitting at the computer at home. Matt told me that he was at the hospital, and that Bob Scott, his boss, had driven him there. Then he said those 4 words I never expected to hear: “The tumor came back.”  My heart stopped. Matt had gone in that morning for an MRI, as he has done numerous times in the past 10 years. He was now at the point where he had an MRI just yearly now, and that one was done in February, which showed that everything was fine. There was no sign of tumor growth, which had been the case for the last 10 years, praise God. But because Matt had been having some seizure activity for the last few months, they suggested he go in for another MRI in July. We then decided we should move up the appointment, because he had been having a headache every day for the past week. Good thing we did.... After I hung up with Matt,  I immediately broke down. I
