Cauliflower Pizza??

It's a hot one today in Kentucky! And I'm lovin' it!

So after yesterday's leg day, my booty is SOOOOORE today! Mission accomplished! :)
 
I did front squats, barbell hip thrusts, walking lunges, calf raises, and ab wheel rollouts, then finished with some 1 arm kettlebell swings and battle ropes. My abs and quads are sore, too, which hardly ever happens!

And I don't know if it was just from taking a week off or changing up my routine, or because the gym felt like a SAUNA, but I really struggled through that workout. Just felt like I had no endurance and couldn't breathe the whole time!
 
So anyway, I finally tried the cauliflower pizza crust that everyone online has been raving about....
Um, yeah.....totally not worth it to me. It wasn't that it tasted bad...it just wasn't....right. I don't know. If I'm going to have pizza, I just want the real thing!  BUT I did use the leftover riced cauliflower to make mashed cauliflower for dinner last night, and that was really good! I just warmed it up in the microwave then put in a spoonful of whipped butter, salt, and parmesan cheese and mashed it up with a spoon-yum! I'll be having it again for dinner tonight!

Have any of you tried the cauliflower pizza thing?Am I the only one who didn't really like it?

  2. Nope, you're not the only one! A friend of mine just said she and her husband tried a cauliflower pizza crust and not only did it make the whole kitchen smell bad, but they didn't like the taste either. Personally, I don't like the mess of trying to deal with ricing cauliflower. Maybe if I had a food processor it would be more appealing? We are pretty satisfied with our coconut flour crust though!

  3. Haha I definitely don't like the idea of cauliflower pizza! I'll take the real thing, thank you very much. I always side eye bloggers who rave about it. I tried cauliflower 'rice' and that freaked me out enough haha

  4. Cauliflower pizza tastes like cauliflower! Bleh! And it takes forever to make the texture just edible enough. :)

Putting My Heart Out There

Hey guys. Here's where we're at right now: Matt finished his radiation treatments last week. Did they help? I don't know. He's sleeping a lot more. Having trouble chewing and swallowing. Not eating much. Not talking much, at least not in full sentences. It's just been a slow, steady decline for the last few months. I think it was really too late for radiation....But who knows, maybe it is delaying things. We went in last Tuesday for his infusion and talked with his neuro-oncologist about everything that we've been seeing with Matt, and he decided that we're at the point now where we should discontinue treatments...I feel like it's the right decision, even though it breaks my heart knowing that there is nothing else we can do. But I feel like we've done everything. All the supplements, the diet, the chemo, the radiation... Matt has fought hard. He never gave up hope. He kept the faith. Why?

Why? Why do I care so much?  Why do I make sure they brush their teeth at night so that they don't get cavities? Why do I spend my own money to buy them clothes, toys and decorate their rooms, among other things?  Why do I do 5,000 loads of laundry a week to make sure they have clothes to wear to school? Why do I make sure they go to church on Sundays so that they'll be raised to know about Jesus? Why do I try to give them chores and responsibilities so that they will turn out to be decent human beings? Why do I read them a bedtime story at night, even when I'm exhausted? Why do I clean up after them constantly and cook for them and try to always have healthy snacks and food on hand? Why do I go to their sports games and practices, just to feel like the odd man out standing there awkwardly with their bio mom? Why do I give 100% of myself and make so many sacrifices for children I didn't birth? Only to be insulted and told hurtful things? To be made to feel like I'm
